My wife and I recently enjoyed a fantastic long weekend hunting fallow deer in Walcha.
The property we hunted is also a cattle property located in Walcha, in the New England region of NSW. The owner also does "farm tourism", which involves urban people coming to the property and pretending to be farmers for a weekend.
The owner's name is Burgh Blomfield and the property is called "Cheyenne". His prices are as follows:
Rates: A$25 per day per bowhunter ($50 per day per rifle hunter)- self guided (the property is easy to explore), with a complimentary drive around the property to see where the deer are most active.
Trophy Fees: A$250- Stag; $80- hind/spiker
Also, they charge $25 per person per night to stay in a "renovated" sheering shed (showers/toilets/frig/etc).
