Drill holes in the Infinite riser so that it can accomodate a "real" grip?

You can do whatever you want with it - but I'd imagine the warranty will be void if you did do something like that.
If you want a grip, I'm sure Jim Loesch could make one exactly how you want it and so that it will fit the Infinite... It may cost a pretty penny to do it but will be cheaper than replacing the riser if it snaps as a result of the holes you drill in it.

Sure you can do it. Just make sure you are nowhere near me when you shoot the sucker. :o

Just making sure I was right before I tell my brother not to do it.

Don't do it.
First up the grip is too wide to accept other grips
Secondly what makes the infinite so great as a bow is that the carbon backing adds strength and stiffness. You drill it you weaken it.
Would be like cutting holes in Hoyt's TEC bar.

Playing devil's advocate here, but perhaps he could glue it on.

The problem with gluing one on is that when you have a curved item like a grip and you try to add to it the curves get smaller. Basically you will end up with a smaller grip.
The INfinite is a nice bow and has done well in copetitions. SHoot it before you worry about modifying it. If you have large hands then just don't buy it.

"but perhaps he could glue it on."
Unlikely, unless someone is looking for a massive grip. Putty is the only viable option I know of...
